How can I control the name of the rpm created by rpmbuild?

It seems that rpmbuild will generate the rpm file into
RPMS/<arch>/<package-name>-<version>-<release>.<arch>.rpm

How can I change this? I'd like to have
RPMS/<platform>/<package-name>-<version>-<release>.<platform>.rpm
