Hmmm... I don't know of any particular software for Linux that does this,
but I'm sure one such program shall be easy to find... Any wave editing
program (like CoolEdit or GoldWave for Windows, for instance) can be used
to get sound from any source and convert into a .wav file... I think you
*might* be able to do almost the same by redirecting the sound output to a
file, but then once again I'm not 100% familiar to the procedure...
Now, if all you weant is to convert a midi file into a wav file, take a
look at TIMIDITY
