It has. If you look at /etc/redhat-release, the only difference will be that "beta" will be removed.

Yes, they should be.

erratas based on the original packages, where necessary, or will all
future security updates only extend the U1 versions of packages?

First, it's safe to consider the changed packages in Update 1 as a collection of erratas.


If a package requires an errata of any kind and the package has been released as an errata previously, then the new errata will be based off of the latest package (in this case what was already released as an errata).

If a package requires an errata and there are no previous erratas for that package, then the errata will be based off of the original GA'ed package.
