I have experienced the same problem with sluggish audio now and then.  I
found that the following 3 things helped, depending on the system:

1) Use hdparm to tune the hard drive
2) Renice xmms (or whatever you use) to -20
3) Get a faster CPU (a little drastic just for mp3's, but this was an
accidental find)
