CUPS & default printers

We have a print server that's running CUPS on RHEL 3. I want to
configure all other RHEL systems to poll the printer list from the
print server since I want them all to see the same printers. However,
there is a group of hosts for which I would like to setup one default
printer and another group of hosts on a different floor that I'd like
to configure to use some other printer by default. Can this be done
somehow, preferably without reconfiguring the individual client
machines?

I also have another question about CUPS on RedHat. What's the
recommended way to make some manual configuration changes so that they
don't conflict with whatever redhat-config-printer does? I find that
redhat-config-printer is convenient for setting up new printers but it
I also find it necessary to edit cupsd.conf by hand to tune access
control and such.
