I typically end up installing the core X stuff for other things that need
it (Dell OMSA being the prime example) but never actually run X on the
server.  I dislike Red Hat's config utils for the most part (they are nice
for creating a consistent default empty template config though :) and tend
to not use them.

Also, if you ssh into your server (from a machine running X) and have
XForwarding allowed in the ssh config (the default in RHEL3) , you can run
the X apps on the server but their display will be exported though your
ssh connection and displayed on your monitor.  This is a bit nicer and
more secure than runing X, IIRC.  The X forwaring works for most stuff,
though there a good bit of closed source stuff (jnbSA) that just chokes
when you do this.  In these cases you just need to manually set $DISPLAY
to something like "your.desktop:0.0" on the remote host, allow port 6000
on your desktop and do an "xhost +remote.machine" to get the native X
display redirection.

So, short answer: everything stays in runlevel 3 expect the console
servers which we actually use as workstations in the datacenter and thus
need X.
