You can use xm to pin a VCPU:

 
xm vcpu-pin [domain-id] [vcpu] [cpus]

Where [vcpu] is the VCPU that you want to attach to, and [cpus] is the target. Pinning ensures that certain VCPUs can only run on certain CPUs.
