There is a gconf key, /apps/gnome-screensaver/lock_dialog_theme that you
can use to select a different theme. Themes live
in /usr/share/gnome-screensaver and consist of a 

lock-dialog-<themename>.glade file plus optionally a 
lock-dialog-<themename>.gtkrc and associated images, IIRC.
