"... their lvm partitions ..." are the keywords here. If you don't
install onto LVM logical volumes (on physical volumes, a.k.a.
partitions) when installing you basically have to backup your data,
scrap your partitions and restore. Ergo, people who want to use LVM
won't install from a live CD that doesn't offer this option.

As a side point, everybody should be using LVM. Directly operating on
partitions is so 1980.
