[mclasen dhcp83-33 ~]$ grep Videos .config/user-dirs.dirs 
XDG_VIDEOS_DIR="$HOME/Videos"
[mclasen dhcp83-33 ~]$ rmdir Videos
[mclasen dhcp83-33 ~]$ xdg-user-dirs-update 
/home/mclasen/Videos was removed, reassigning VIDEOS to homedir
[mclasen dhcp83-33 ~]$ grep VIDEOS  .config/user-dirs.dirs 
XDG_VIDEOS_DIR="$HOME/"


Seems to work here.
