Jermoe,

I had the same issue yesterday and found that the owner on 
/var/run/dirsrv were set to root.  I changed it to "nobody"  the default 
for FDS, and was able to install just fine.

I found this bug which might be helpful.

  Bug 430368 -  Running setup-ds.pl on Fedora 8 fails: Server failed to 
start !!! / Failed to open stats file
