Simple, but daunting query -> Post Installation

I've been using Freebsd for years, and have just switched to Fedora Core
1.

I installed what I thought were the correct packages on my server.  I
find that some items were installed that I didn't want, while others
that I wanted were not.

I figured out how to disinstall packages.

How do I post-install items like MySQL, Qpopper, etc from either the
CD's or RPM's (and where do I find them specifically for Fedora)?
