Pass 'selinux' to the installer at the Boot prompt.  But note that FC3T2
might be a better option for SELinux at this point, as much work has
gone into improving the SELinux integration in FC3.  FC3T3 is expected
Oct 11th according to the schedule, and FC3 final is coming Nov 1st. 
Note that if you want to use the SELinux strict policy with FC3, you
have to install selinux-policy-strict*, then use
system-config-securitylevel to switch from the default targeted policy
to the strict policy and reboot.
