Agree, that is the "right" (TM) way to do it, but can do it in grub by
putting "3" on the kernel line (runlevel 3).  Can accomplish the same
thing at boot time by typing "a" (append) followed by "3" at the grub
menu.  [Same approach to boot to single-user mode - replace "3" by "1"].
