Portmap is required, but when I go to "menu -> system settings -> server
settings -> services" I find that portmap is already configured to be on
even with nfs turned off.

The delays and pauses in transfer can often be made less obvious by
using some of the options in /etc/fstab for nfs mounts.  I use
rsize=8192,wsize=8192 and I seldom see the delays you have noted.  Tweak
the options to see what affect they have on your systems.  Many options
are there and they are expressly for fine tuning performance.  Network
activity may also be a factor.
