It's way too easy to delete, or mangle, any file on the system.

Any flaws in an application that you're running can do anything to a
system.  e.g. As root, an malicious exploit of your the web browser can
trash your system, but if you were browsing as an ordinary user, it's
very hard for that to happen.

Plenty of others, but those are probably the top of the list, and easy
to understand.
