The plain text network configuration files are
/etc/sysconfig/network-scripts/ifcfg-<device>.
The GUI tool stores config files below /etc/sysconfig/networking/. But
as you said you normally do only plain text config file editing just
adjust /etc/sysconfig/network-scripts/ifcfg-<device>.
General network settings like the hostname and the default gateway (and
the GATEWAY has only to appear there!) are set in
/etc/sysconfig/network.
