Jeff,

The first 512 bytes of the drive are loaded into memory and control is
passed to the beginning.  Boot loaders start with a jump over a data
area to the interesting code.

The boot loader is munged during install.  Essential data is placed in
some parts of the data area where the original has zeroes.
