What about setting Evolution up only for local mailing?  Then they can
use hotmail or the like to email something to themselves at home. 
This is how John Thatcher set up his kids at Connections Public
Charter in Hawaii.  No spam, internal email only between teachers and
students.  If you allow VNC access, the students can also see and use
their account from home.
