Kevin,
All the NFS errors I've had thus far dealt with the packet size. The 2.6 
kernel creates a larger packet, so if you have a gig nic in the server 
and a gig switch and a 10/100 client, the nfs times out.
This may or may not be the case, but if it is, try Jim's fix;

Or you can just swap the gig switch for a 10/100.
