In almost all circumstances, I would say no.  If the kernel works, use it.
Most of the time the performance issues are not just limited to the kernel
itself, for example, some of the low-end processors from AMD are not 100%
Intel compatible.  You might have to compile individual applications to use
MMX or no MMX, 3D-Now technology, etc, etc.

If you really want to push your hardware expect to not only make a custom
kernel but also maybe recompiling multimedia applications and drivers for
your targeted hardware.
