Dave, Someone with more experience of LVM2 may know. It's worth running lsmod |grep dm_

To see which device-mapper modules are loaded. Look for dm_snapshot and if it's not there try modprobe dm_snapshot before running the lvm lvcreate. This should be loading automatically. It might be worth waiting for an alternative answer as creating snapshots without the modules autoloading might leave the machine in an unusable state.
