I recommend "Running Linux" book by O'Reilly publisher. It supposed to be 
vendor neutral (although there is Redhat stuffs in there) but it tells you 
more about linux administration.

Usually a book like that talks more about the GUI which mostly relevant to 
that Redhat version (but it may also be relevant in newer version if not much 
has changed).
