You can actually do it as:

rpm -q --queryformat='%{N}-%{V}-%{R}.%{arch}\n' <pkgname>

If you want to make it so that you don't have to type the queryformat string all the time you can add this to your ~/.rpmmacros file

%_query_all_fmt      %%{name}-%%{version}-%%{release}.%%{arch}
