We are also on a university subscription so I have dealt with this some.
If the package doesn't have a lot of dependencies you can probably update
it, but you're on your own with security updates and so on. It's probably just
as good to rpm -e dovecot and install from source in /usr/local/ .

If it does have dependencies (e.g., openssl), I've found it easiest to rebuild
Red Hat's rpm each time there is an update with your local bugfix.

For those of us on university subscriptions, I think all we can do is report
it here and fill out a Bugzilla RFE (and wait a year for the process)

If it's a really bad bug it might make it into fastrack.
