I am not positive but I would guess the NFS server is having issues
because of NIC failures or the NFS is getting ready to die due to
load.  Have you stopped and started the service?  Have you updated the
box?  I would find some updates for NFS and NFS related packages -
nfs-utils, portmapper.  See if there any firmware updates for your
NIC.  Is the load high on your machine?
